The sub-folders are called Labels. On your inbox, click on Move To > Manage Labels.
Then at the bottom, you can make new labels (sub-folders) to move things to. When you're done, use the tick-boxes to select messages and "Move To" to move them.
The folders appear on the left at the bottom of the menu starting with Inbox, Buzz, Starred, etc.

I should make a few.... JUST to prove to my friends I'm not as crafty as they think!!! Or maybe I should just make clay ponies and call it a day.....
You can also have sub labels. If you have a label called Art would be Art/Sub Art Folder. Hope this helps.
