I don't think Twilight is strong enough to do full body transformations yet, she got worn out trying to give Rarity Wings, plus she botched the Mice to Horse spells... but when her skills are good enough, maybe.
Hey, off track, but what were the other 2 choices for how RD got her cutie mark. I heard about the voting afterward but wasn't into it at the time. Now she's me favorite character and i'm dying to know.
But yeah, Twilight is scary. We've seen her manipulate memories, mindrape an entire town to love a specified item to the point of violence, puppet birds (winter wrap up) and ponies (green isn't your color), rewrite the behavior if not physiology of hundreds or thousands of fairly complex creatures, put out a minimum of a few hundred tons of force with her telekinesis, and teleport into a solid object (tearing it apart but emerging unharmed herself). And that's when she's just casting normally; when she lost control as a filly she turned her parents into potted plants, aged up a dragon by a few hundred years, and rendered four of the heads of a magical university completely helpless.
Not to say that the rest of the mane six aren't scary. Fluttershy's Stare appears to be some manner of high level mind-control effect, and she does it involuntarily. The sonic rainboom has been known to shatter stone many miles away, and even without that Dash appears to be able to fly at roughly mach 8 and pull a minimum of 1600 Gs in a turn. Pinkie's a precognitive reality warper, with the full extent of her abilities unknown (if there's a limit at all). And Rarity and Applejack... well, huh.
Applejack gets pretty ripped off when it comes to super powers. The rest of the Mane Six all have something they can do, whereas Applejack only has what she knows.
Not that it makes Applejack a terrible pony, it makes her normal. Infact, moreso because it's harder for her to keep up with the rest. She does her best with what she's got, plus she's got heart. <3 Applejack.
But considering what Twilight has done with her magic thus far, and she's considered a young adult right now, just think about what she'll be able to do in the future. Let's be glad that she's a good girl, eh?
If Trixie comes back, I wonder if they'll give her a better showing of her magical powers. They always make Trixie into a rival for Twilight, but she isn't much of one unless she can do something similar. It's more like a one-sided rivalry at this point. After all, a rival wouldn't be a rival unless they challenged you in some way.

@Dublio Well, Applejack does have superpowers, they're just a lot less dramatic than the others. For example, she can kick a tree such that not only do all of the apples fall in the exact positions she chooses, but with the rhythm she wants. And she can apparently hold her breath under mud for several minutes. And Rarity can't be entirely normal either; while Fluttershy and the CMC were dealing with monsters in the Everfree forest, she created large quantities of rare materials, fashioned them into a large order of clothing, and then delivered them to a different city herself, while still being back by morning.
I figure that they must be using a point-buy system for character generation; the ones without the really fancy powers are the ones with successful businesses, more practical skills, and a number of beneficial contacts in other cities.
Moral of the story: Don't piss off the unimaginably powerful Unicorn that most of the country turns to to solve their problems. It just won't end well for you. Though this could be Twilight's payback for the whole Pinkie Sense incident.
