Well, "shipping", short for "Relationshipping", I suppose, is basically the romantic pairing of any two (or more in some cases) characters in any fictional universe.
An example: Rainbow Dash is shipped with just about any character in MLP:FiM, for some reason. RDxApplejack is pretty popular for shipping.
To ship, all you have to do is see whether or not the chemistry between two characters mixes well if you decide to pair them.
Although not all ships have to be "serious". Crack shipping uses an absurd pairing for possible comedy value, for example: Spike and oh, I dunno, his hand, or maybe Twilight Sparkle and a book.
I'm not much into shipping myself, I just know this from having observed it over years in the various fandoms I've seen.
